Here’s another guilt-free, feel-good dessert that’s healthily packed with protein, fibre, and is extra smooth and soft!
What you need:
- coconut oil cooking spray
- 1 cup of dried black beans, soaked over night, cooked, simmered and drained OR 1 can (15.5 oz/439g) black beans, rinsed and drained – find a can with no sugar or salt added. Just the beans and water
- 1/4 coconut oil
- 2 eggs or 2 Chia eggs for vegan option (soak 2 tbsp of chia seeds in 6 tbsp of water for 30 minutes)
- 1/3 cup cocoa
- 1/2 cup brown sugar (play around with this quantity to suit your sweet tooth but don’t overdo it )
- 1 tsp baking powder
- 1 tsp vanilla extract
What to do:
- Preheat oven to 350 F (180 C). Spray 8 x 8 (20 x 20 cm) baking dish with coconut oil cooking spray.
- In blender or food processor, place beans, coconut oil and blend well.
- Add eggs/chia egg, cocoa, brown sugar, baking powder and vanilla extract to mixture and blend until smooth.
- Transfer mixture to baking dish.
- Bake 20-25 minutes or until inserted toothpick comes out clean. Store in refrigerator.
