I know I’m a day late for St. Patty’s Day, but I’ve been sick this entire week after coming back from Dominican, so I was scrambling to find a simple and easy green recipe to make for my Thursday night yoga students. Joyous Health answered my prayers when her newsletter came in my inbox yesterday with this, promising a quick, guilt-free treat that everyone will love! She didn’t disappoint!
I did not have time to shop for ingredients so I used whatever I had at home. I modified the recipe a lot but it turned out DELICIOUS! YOGI approved!
This only took about 10-15 minutes and no baking involved!

What you need:
- 1.5 cups almonds
- 1/4 cup dark chocolate chips
- 1/2 cup raisins and cranberries
- 1/2 tsp vanilla extract
- 3 ripe avocados
- 1/4 cup liquid unpasteurized honey
- Juice from 1 lime
- Combine almonds, chocolate chips, raisins, cranberries, half of the honey and vanilla in a food processor or blender and give a whirl until crumbly.
- Press the tart mixture into small cake tin. Refrigerate while you make the pudding top.
- Combine avocados, the rest of the honey and lime juice in a food processor or blender until creamy. Give it a taste test. Because limes vary greatly in juiciness you may need to add more lime juice.
- spread avocado topping among the tart mixture. Enjoy immediately or refrigerate until serving. Garnish with coconut flakes (I didn’t have any)
I’m very happy that my students love it, and I was very impressed myself when I gave it a taste! Looks and tastes like spring! 🙂
